02 - Season chicken breasts generously with salt, pepper, paprika, and thyme on both sides.

05 - Sprinkle mozzarella and Parmesan cheeses evenly over the top of the chicken and mushrooms.
06 - Bake uncovered for 25-30 minutes, or until chicken reaches an internal temperature of 165°F and cheese is bubbly and golden.
07 - Let the dish rest for 5 minutes before serving. Garnish with fresh herbs if desired.

# Helpful Hints:

01 -
  • The cheese forms this incredible golden crust that everyone fights over
  • Mushrooms release their juices into the broth, creating an instant sauce at the bottom of the pan
  • Seasoning the chicken directly means flavor in every single bite, not just on top
02 -
  • Pour the broth around the chicken, not directly on top, or youll wash off all that seasoning you just applied
  • The cheese will continue browning for a minute or two after you pull it from the oven, so dont wait for perfect color
  • Using a meat thermometer is the only way to guarantee juicy chicken without cutting into it and losing those precious juices
03 -
  • Pat the chicken dry with paper towels before seasoning, or the spices will slide right off
  • Let the mushrooms get a little golden color in the skillet before adding garlic, theyll have much more flavor that way
