Blueberry Lemon Overnight Oats (Printer-Friendly)

Creamy oats soaked overnight with blueberries, lemon zest, chia, and a drizzle of maple for a bright, ready breakfast.

# What You’ll Need:

→ Oat Base

01 - 1 cup old-fashioned rolled oats
02 - 1 cup milk (dairy or plant-based)
03 - 1/2 cup plain Greek yogurt
04 - 1 tablespoon chia seeds
05 - 1 to 2 tablespoons maple syrup or honey

→ Flavor and Fruit

06 - 1 cup fresh or frozen blueberries
07 - Zest of 1 lemon
08 - 1 tablespoon fresh lemon juice
09 - 1/2 teaspoon pure vanilla extract

→ Optional Toppings

10 - 2 tablespoons chopped nuts (almonds or walnuts)
11 - Extra blueberries
12 - Additional lemon zest

# How To Make It:

01 - In a medium mixing bowl or mason jar, add the rolled oats, milk, Greek yogurt, chia seeds, maple syrup, lemon zest, lemon juice, and vanilla extract. Stir thoroughly until all ingredients are evenly incorporated.
02 - Gently fold the blueberries into the oat mixture using a spatula or spoon, distributing them throughout without mashing.
03 - Seal the bowl tightly with a lid or plastic wrap and place in the refrigerator for a minimum of 6 hours, preferably overnight, to allow the oats to absorb the liquid and soften.
04 - In the morning, remove from the refrigerator and stir well. If the mixture is too thick, add a splash of milk and stir until the desired consistency is reached. Top with chopped nuts, additional blueberries, and extra lemon zest as desired. Serve chilled.

# Helpful Hints:

01 -
  • You will wake up to breakfast that is already done, creamy, and waiting for you with zero morning effort.
  • The lemon zest brightens everything in a way that makes regular oatmeal feel flat and sad by comparison.
02 -
  • I once used steel cut oats by accident and spent the morning chewing through a jar of crunchy disappointment, so stick with rolled oats only.
  • Zesting directly into the jar instead of onto a cutting board captures every drop of the essential oils and makes a noticeable flavor difference.
03 -
  • Layer the blueberries on top of the oats mixture instead of mixing them in if you want to keep the oats a clean pale color for presentation.
  • A tiny pinch of salt sounds wrong in a sweet breakfast but it sharpens every flavor and makes the maple syrup taste twice as rich.
