04 - 1 garlic clove, minced
05 - 1 tsp smoked paprika
06 - ½ tsp salt
07 - ¼ tsp black pepper

→ Salad

08 - 5 oz mixed salad greens (such as arugula, spinach, romaine)
09 - 1 red bell pepper, diced
10 - ½ red onion, thinly sliced
11 - 3.5 oz cherry tomatoes, halved
12 - 1 cucumber, sliced
13 - 2.8 oz sweetcorn (cooked or canned, drained)

→ Dressing

14 - 3 tbsp olive oil
15 - 2 tbsp apple cider vinegar
16 - 1 tbsp honey
17 - 1 tsp Dijon mustard
18 - Salt and black pepper, to taste

→ Optional Garnish

19 - Fresh coriander or parsley, chopped

# How To Make It:

01 - In a mixing bowl, combine the chicken cubes with olive oil, BBQ sauce, minced garlic, smoked paprika, salt, and black pepper. Toss thoroughly to coat and let sit for at least 15 minutes to absorb flavors.
02 - Preheat a grill or grill pan to medium-high heat. Thread the marinated chicken pieces onto skewers, ensuring even spacing for consistent cooking.
03 - Place the skewers on the hot grill. Cook for 12 to 15 minutes, turning occasionally, until the chicken is fully cooked through and develops a slight char.
04 - While the chicken cooks, combine the mixed greens, red bell pepper, red onion, cherry tomatoes, cucumber, and sweetcorn in a large serving bowl.
05 - In a small bowl, whisk together the olive oil, apple cider vinegar, honey, and Dijon mustard until the mixture is smooth and emulsified. Season with salt and pepper to taste.
06 - Pour the dressing over the salad mixture and toss gently to coat all ingredients. Serve the salad on plates, topping each portion with a hot chicken skewer. Garnish with fresh herbs if desired.

# Helpful Hints:

01 -
  • The contrast between the warm, smoky chicken and the cool, crunchy vegetables makes every bite exciting.
  • It comes together in under an hour but tastes like you put much more effort into it.
02 -
  • Do not skip marinating the chicken, even if it is just for 15 minutes, as it is the only way to get flavor deep into the meat.
  • Let the chicken rest for a few minutes off the heat before serving to keep the juices locked inside.
03 -
  • Use metal skewers if you have them, as they conduct heat to the inside of the chicken, cooking it faster.
  • If using wooden skewers, soak them in water for 30 minutes to prevent them from burning on the grill.
